I love Cafe Rio Sweet Pork salads. Like really love them. Like, I could eat them every day and not get sick of them kind of love. Here’s the thing. Buying the real deal involves lots of money, and LOTS of calories. I decided to make the sweet pork at home and with fewer calories than if I were to eat it at Cafe Rio, and you guys, I have a dead ringer as far as taste goes. We had these for dinner last night and I got thumbs up from the whole family! Here’s my healthier Cafe Rio Sweet Pork Copycat recipe!

The key to this recipe is using the crock pot and diet coke. Yep! You read that right! Diet Coke! You need to try this out ASAP, trust me!

Cafe Rio Sweet Pork Copycat

Ingredients

  • 3-4 lbs pork roast
  • 1 bottle diet coke
  • 1 1/4 c brown sugar
  • 1/8 tsp garlic salt
  • 1/4 c water
  • 1 can diced green chilies
  • 10 oz can red enchilada sauce (I use Old El Paso Brand)

Instructions

  1. Place the pork roast in the crock pot and add half of the bottle of coke and 1/4 cup of brown sugar.
  2. Cook on high for 3-4 hours until pork shreds easily.
  3. Once cooked, remove pork from crock pot and shred meat.
  4. Dump all of the juices out of the crock pot and then return the pork to the crock pot.
  5. In a blender, combine the other half of the coke, 1/2 of the can of chilies, enchilada sauce and the remaining 1 cup of brown sugar.
  6. Add the sauce to the pork in the crock pot and continue to cook on low for 2 hours
  7. Enjoy!

Serve the pork on salads or burritos. Either way, your family is sure to love it, and it makes delicious leftovers as well! Tomorrow, I will have a skinny version of the cilantro dressing from Cafe Rio that you will love so much that you won’t even miss the calories!
