Kayley is back today with a delicious new recipe!  I have never heard of vegetarian sloppy joes before, but they look amazing!  Just go ahead and see what I am talking about! *****

One of the things I look forward to in the new year is getting back to healthier eating. I know that in December meats and sweets are consumed in a much higher quantity in my home than they usually are the rest of the year. So I find it refreshing to get back to the foods that I know will keep me feeling good and healthy.

Today I am sharing with you a favorite vegetarian meal of mine that combines a classic comfort food with healthy, nutritious ingredients. The vegetarian sloppy joe.

These babies are full of protien and fiber thanks to the lentils and wheat berries, along with a lot of flavor and great texture. I served these on homemade pretzel rolls(head on over to my blog on Friday, I’ll be posting the recipe!) and topped them with melted cheese and sliced avocado.

Not sure how to cook lentils and wheat berries?! I’ve included instructions at the end of this post to show you just how simple they are to prepare.

HOW TO COOK LENTILS:

*Don’t add salt until the end when cooking lentils! It may cause them to become tough if added before they are cooked.

Place 1/2 C. Dried Brown Lentils in a strainer and rinse under running water, picking out any debris. Place the lentils in a small saucepan and cover with 1 C. of water. Bring the water to a boil, then reduce the heat to medium and cover the pan with a lid. Let the lentils simmer for 30-40 minutes, checking on the water levels occasionally to make sure it doesn’t cook out.

The lentils are done when they are tender and the skins begin to slip off. Remove the lentils from the heat and allow them to sit for 5-10 minutes, covered, so that any excess water will be absorbed. Now they are ready for use!

HOW TO COOK WHEAT BERRIES:

Wheat berries triple in size when cooked. This recipe will give you the amount needed to make my sloppy joe filling.  I like to cook extra and eat the leftovers with cinnamon sugar and milk.

Directions:

Place 1/2 C. Dry Wheat Berries and a pinch of salt in a small saucepan and cover with 1 1/2 C. Water. Bring the water to a boil, reduce the heat to medium, and let the berries simmer, covered, for about 30 minutes.

After 30 minutes, check the berries for doneness. They should be chewy, but not hard at all. If they are not quite tender enough, keep them simmering for another 5 minutes or so. Drain the wheat berries when done and they are ready to be used!
