It’s fruit stand season over here, and I find myself stopping a couple of times every week to buy fresh fruits and veggies to add to our menu. I can’t get enough of the fresh corn on the cob or the different types of melon. A couple of days ago, I noticed that they were selling peaches and knew I needed some. They told me I could buy a bag with 8 peaches in it for $8, or I could buy a box full for $11……ya, I bought the box. Now I have about 40 peaches that I need to find delicious ways to use. First on the list? I tried out a homemade peach ice cream recipe and OH. MY. GOODNESS. It is delicious! If you have some peaches to use up, this is definitely a recipe that you can’t pass up.

My girls have been wanting to help me in the kitchen a lot more lately, and I love it. I try to give them a task and let them go for it. To make the ice cream, we started by skinning the peaches and taking out the pit. Then I handed off the peaches to Lillie and she cut them into pieces and then put them into the bowl.

The ripest peaches make this super tasty. With the peaches in the bowl, you’ll add the sugars, vanilla and almond extracts, and lemon juice and let it sit until the peaches are super juicy. My girls mixed it occasionally while it sat for about 15 minutes. It smelled amazing!!

After the peaches are nice and juicy, you put the mixture into a blender and pulse leaving some chunky peaches. Then add the cream until it’s mixed together with the peach mixture. It should turn a soft orange-peachy color.

Add the mixture to the ice cream maker and follow the manufacturers instructions for use. I put my ice cream into an air tight container once it was done in the mixer and then stuck it in the freezer so that it could setup and freeze a little more.

There is just so much flavor packed into this ice cream, my kids couldn’t get enough of it! My youngest took one bite and then didn’t quit eating until the ice cream was gone on his cone. Then he handed it to me and wanted more! For a kid that usually just eats the cone, this is a big deal! Trust me, you need to try it!

Peach Ice Cream Recipe

Ingredients

  • 4 cups peaches (peeled and sliced about 5 peaches)
  • 1/2 C sugar
  • 1 C brown sugar
  • Juice of 1 large lemon
  • 2 tsp vanilla
  • 1/4 tsp almond extract
  • 2 C heavy cream

Instructions

  1. Combine sliced peaches, sugars, lemon juice, and extracts in a large bowl. Stir together and let sit for about 15 minutes stirring occasionally until the sugars have dissolved and the peaches are juicy.
  2. Put peach mix into a blender and pulse until the peaches are broken down but not totally pureed. Add heavy cream and mix together.
  3. Chill mixture in an airtight container until cold
  4. Pour mixture into ice cream machine and follow manufacturers instructions to finish. Once churned, put it in an airtight, freezer-safe container and allow ice cream to freeze before serving.
